I cook breakfast for my Type 2 husband and am in need of some info. When I am fixing his breakfast I don’t know what to substitute for the potato and the bread.
I’ve tried sliced tomato, but it doesn’t give the same fullness that hash browns and toast/biscuit used to give.
I don’t have any trouble when it’s scrambled or omelets because I use the veggies alot, but when it’s over easy I’m at a loss.
And is there any advantage to eating Yukon Gold potatoes, and or sweet potatoes?
Thanks I really am using this site alot reading and learning and I wanted to thank you all. you have taught me alot.
