low carb recipes in current magazines

The magazine subscriptions I got for Christmas have been arriving. I’m pleasantly surprised to see the good nutrition info in some. But why have it for just some of the recipes and not others in the same issue?

I look for 30 or fewer carbs per meal.

In Family Circle, so far, finding many low carb recipes so I don’t have to substitute ingredients.
Feb ’10 issue has
Lemony flounder with roasted zucchini 14 carbs, stuffed chicken breasts and cherry tomato salad 16 carbs, Loin of pork and citrus chutney 14 carbs, Teriyaki salmon with broccoli 25 carbs, classic meat lasagna 26 carbs.

The Jan ’10 issue had three beef recipes Harvest pot roast with veggies 23 carbs, beer braised short ribs 10 carbs ( I’ve never cooked ribs), and Saurbraten 10 carbs ( never had this dish either). It has an interesting burger recipe with 28 carbs and 4 fiber including a whole grain bun for the Ultimate Turkey Burger. (I’ve never had ground turkey. ) They mix ricotta cheese in with the ground turkey and add worcestershire sauce. Then there are the interesting recipes with no carb info – oriental glazed chicken and unstuffed cabbage.

Cooking Light Jan/Feb ’10
Jerk Mackerel with papaya salad 4.8 carbs, salmon croquettes 12.6, jalapeno- chicken sausage- jack cheese- and egg Breakfast Braid 7.3, pea soup 34.8 carbs and 15.4 fiber, baked vegetable lasagna 28.8 and 5.3 fiber. beef and pinto bean chili 30.4 carbs and 8.5 fiber, Steak tips with peppered mushroom gravy and noodles 28 carbs ( which I can lower using smarter noodles) ,
and some sweets I should used substitutions to lower the carbs…
Choc-cherry heart smart cookies 15 carbs, Fudge Almond tart 24.6 carbs.

Family Circle recipes are online at parents.com with a link to recipes from the December issue not the current issue. I find this site very difficult.

My shopping list has ingredients to make the high fiber pea soup, stuffed chicken breasts, and the Breakfast Braid. We have everything to make the roasted zucchini and the Salmon croquettes. I love fish cakes. Still not sure about those turkey burgers but with the ricotta, mustard and wor. sauce added, I’m sure it’s scrumptious and rich.
