Leeks with Balsamic Dressing( Vegetables – Leek )

INGREDIENTS:

    • 8 small leeks, halved
    • 4 T olive oil
    • 1 T balsamic vinegar
    • 1 t wholegrain mustard
    • Salt and pepper to taste

METHOD:
Steam or boil, or grill the leeks until tender, for about 8-10 minutes. Drain thoroughly. Whisk the oil vinegar and mustard together and season to taste. Serve the leeks drizzled with balsamic dressing.
