  • I’m not much of a cook

    but I must eat. The freezer compartment contained a package of eye of round, 24 oz. Pictsweet vegetables for stew, and some Birdseye frozen green beans. So I made Vegetable Beef Soup. I have a hunch I shouldn’t have eaten that many cooked carrots, right?

    Well, on Tuesday I get a monitor.

    And all the other stuff? I’m lost! :confused:
  • My Supper

    I bought two grilled chicken breasts from Bob Evans, took them home and opened a can of No Salt Added cut green beans. I drink bottled Ice Mountain water and black coffee.

    What should I be eating?

    Remember, I do not have a monitor yet.

  • What to eat for breakfast?

    I get nauseous thinking about scrambled eggs! Sometimes I microwave a Lean Cuisine frozen dinner. I don’t have a monitor yet, so what should I eat?
  • Tortilla Wraps?

    We probably shouldn’t have these, but I have to ask because I like this sort of thing if it isn’t spicy. I have acid reflux.

    □ 8 oz. soft spreadable cream cheese (chives, onions or garlic, herb or garden vegetable)
    □ 1 pkg. Flour Tortillas (10 small or 8 large)
    □ 1 lb. thinly sliced deli ham (or any other deli meat)

    Spread each tortilla with a layer of flavored cream cheese. Add slices of ham to cover. Roll up tortilla. Wrap each one tightly in plastic wrap. Refrigerate several hours or overnight until firm. When ready to serve, slice across each tortilla roll into 1 inch bite-size pinwheels. Arrange on serving dish, garnish with parsley. (Plain cream cheese roll- ups are also delicious.)

    Are we never allowed to use tortillas?

    I’m living in Indiana and was just diagnosed with diabetes this month. I haven’t even been to any diabetes education classes yet nor have I been prescribed any medication.
