{"id":173119,"date":"2010-01-13T02:30:07","date_gmt":"2010-01-13T07:30:07","guid":{"rendered":"http:\/\/nourishedkitchen.com\/?p=2930"},"modified":"2010-01-13T02:30:07","modified_gmt":"2010-01-13T07:30:07","slug":"10-tips-for-perfect-homemade-yogurt","status":"publish","type":"post","link":"https:\/\/mereja.media\/index\/173119","title":{"rendered":"10 Tips for Perfect Homemade Yogurt"},"content":{"rendered":"<div class=\"tweetmeme_button\" style=\"float: left; margin-right: 10px;\"><a href=\"http:\/\/api.tweetmeme.com\/share?url=http%3A%2F%2Fnourishedkitchen.com%2F10-tips-for-perfect-homemade-yogurt%2F\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/api.tweetmeme.com\/imagebutton.gif?url=http%3A%2F%2Fnourishedkitchen.com%2F10-tips-for-perfect-homemade-yogurt%2F\" height=\"61\" width=\"51\" \/><\/a><\/div>\n<p><a href=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2010\/01\/homemade-yogurt-with-frozen-fruit.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2935\" src=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2010\/01\/homemade-yogurt-with-frozen-fruit.jpg\" alt=\"\" width=\"512\" height=\"384\" \/><\/a><\/p>\n<p><em>This is a guest post from Katie at <a href=\"http:\/\/www.kitchenstewardship.com\" >Kitchen Stewardship<\/a>.<\/em><\/p>\n<p>I\u2019d like to think of myself as a yogurt diva, if you\u2019ll indulge me a moment.\u00a0 Jenny has me beat in all other things probiotic, and I\u2019ll gladly crown her Get Cultured Queen if she\u2019ll allow me to be the Yogurt Fairy here at Nourished Kitchen.<\/p>\n<p>I make a gallon of yogurt in each batch, about every week and a half or so.\u00a0 My family is absolutely lost if we run out.\u00a0 We eat it at breakfast, lunch, and snacks constantly as well as using it in some <a href=\"http:\/\/www.kitchenstewardship.com\/2009\/11\/30\/soaking-whole-grains-why-do-it\/\" >soaked grain recipes<\/a>.\u00a0 It\u2019s imperative to have an easy system when you use a homemade food that often.\u00a0 I\u2019ve got it down to a science.<\/p>\n<p>You can see my whole tutorial on <a href=\"http:\/\/www.kitchenstewardship.com\/2009\/04\/13\/monday-mission-homemade-yogurt-the-easy-way\/\" >how to make homemade yogurt<\/a>, photos and all, if you&#8217;re interested in my no dishes, no special equipment, simplified yogurt making method.\u00a0 For now, here are the top 10 tips I\u2019ve learned over the past four years of making my own yogurt:<\/p>\n<ol>\n<li><strong>Don\u2019t burn the milk<\/strong>.\u00a0 This is key for multitasking mamas and other busy people who have trouble standing around to stir milk.\u00a0 You can avoid burnt milk by putting glass jars filled with milk into a pot of water and boiling them that way instead of putting the milk right in the pot.\u00a0 This also saves on dishes, one of my favorite worthwhile pursuits.<br \/>\n<a href=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2010\/01\/IMG_6107.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2937\" src=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2010\/01\/IMG_6107.jpg\" alt=\"\" width=\"410\" height=\"307\" \/><\/a><\/li>\n<li><strong>Don\u2019t cool your milk down in the refrigerator. <\/strong>Put it outside in the winter or in a sink of cold water and a few ice packs, or even on the counter if you&#8217;re willing to deal with inconsistency, not in the refrigerator which is taxing to the system and ultimately costly.<\/li>\n<li><strong>More starter is not better<\/strong>.\u00a0 Two tablespoons starter per quart of milk is perfect.\u00a0 Any more, and the bacteria will be too crowded as it tries to culture. Survival of the fittest = runny yogurt.<\/li>\n<li><strong>Incubate at around 100 degrees F for maximum creaminess. <\/strong>I used to shoot for about 110, but I have found that slightly less than that seems to get more consistent texture results.<\/li>\n<li><strong>Incubate 12-24 hours<\/strong> to allow the bacteria time to predigest the milk proteins.\u00a0\u00a0Nearly all the lactose is converted to lactic acid at this time, and many lactose intolerant people\u00a0 can eat 24-hour yogurt without repercussion.<\/li>\n<li><strong>Place jars in the freezer for the first hour<\/strong> or so after culturing.\u00a0 This will stop the multiplying\u00a0 of bacteria quickly, which gives you the best, delightfully creamy consistency.<\/li>\n<li><strong>Use free jars. <\/strong>I like to keep my jars from spaghetti sauce, etc. to use for making yogurt.<\/li>\n<li><strong>Eat your yogurt with as little sweetener as possible<\/strong>.\u00a0 I&#8217;ve weaned myself down from sweetened yogurt cups to just needing a little bit of honey, or even no sweetener if I mix in homemade applesauce with LOTS of cinnamon.\u00a0 (See 4 tips for eating<a href=\"http:\/\/www.kitchenstewardship.com\/2010\/01\/12\/kitchen-tip-eat-plain-yogurt-with-little-or-no-sweetener\/\" > less sugar in your yogurt<\/a>.)\n<p><div id=\"attachment_2933\" class=\"wp-caption aligncenter\" style=\"width: 394px\"><a href=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2010\/01\/yogurt-with-applesauce.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2933\" src=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2010\/01\/yogurt-with-applesauce.jpg\" alt=\"\" width=\"384\" height=\"512\" \/><\/a><\/p>\n<p class=\"wp-caption-text\">My son demonstrates his love for applesauce and yogurt.<\/p>\n<\/div>\n<\/li>\n<li><strong>The no-thermometer method. <\/strong>I like having one less item to gather when I make my yogurt.\u00a0 I can tell each temperature now without the thermometer:<br \/>\n*Up to 180 when a skin forms on top of the milk.<br \/>\n*Down to 100-110 when (a) I can hold the jar without pain and (b) a drop on my wrist feels warm, within a few degrees of body temp, not painful.<\/li>\n<li><strong>Freeze some starter. <\/strong>If you&#8217;ve tried Greek yogurt or have a special starter that cost you a lot, freeze some of the first batch right away in baby food jars.\u00a0 Generally the yogurt will still culture just great after thawing, but I always like to have a few backups just in case.<\/li>\n<\/ol>\n<p>I am a firm believer in the health benefits of yogurt, and the convenience of always having it on hand makes the never-ending question, &#8220;What is nourishing that I can offer my kids for a snack that won&#8217;t take long to prepare?&#8221; an easy one.\u00a0 &#8220;Yogurt with&#8230;&#8221; is always answer number one.<\/p>\n<p>My next goal is to figure out how to dehydrate yogurt-n-fruit rolls so I can take it in the car with us without the serious mess factor.<\/p>\n<p><strong>How do you take your yogurt?
