One well-circulated experiment found that the calorie counts had <a href=\"http:\/\/www.motherjones.com\/kevin-drum\/2009\/10\/chart-day-0\">zero impact<\/a>. Atlantic bloggers Megan McArdle and Corby Kummer <a href=\"http:\/\/www.theatlantic.com\/doc\/200912u\/blogger-debates\/4\">debated<\/a> the implications (Megan&#8217;s saw her skepticism validated; Corby noted that some companies had changed ingredients under the harsh light of calorie data.) <\/p>\n<p>But <a href=\"http:\/\/www.nber.org\/papers\/w15648\">this research<\/a> from NBER,  by Bryan Bollinger, Phillip Leslie, and Alan Sorensen, finds that publishing calorie counts <i>can<\/i> change our incentives after all:<\/p>\n<p><\/p>\n<blockquote>\n<p>We study the impact of mandatory calorie posting on<br \/>\nconsumers&#8217; purchase decisions, using detailed data from Starbucks. We<br \/>\nfind that average calories per transaction falls by 6%. The effect is<br \/>\nalmost entirely related to changes in consumers&#8217; food choices&#8211;there is<br \/>\nalmost no change in purchases of beverage calories. There is no impact<br \/>\non Starbucks profit on average, and for the subset of stores located<br \/>\nclose to their competitor Dunkin Donuts, the effect of calorie posting<br \/>\nis actually to increase Starbucks revenue. Survey evidence and analysis<br \/>\nof commuters suggest the mechanism for the effect is a combination of<br \/>\nlearning and salience.<\/p>\n<\/blockquote>\n<p>And so long as we&#8217;re on the topic of changing buyers&#8217; behavior, here&#8217;s<br \/>\nanother experiment about how the sound of certain prices can make<br \/>\nconsumers think a price sounds like a better or worse discount (via the<br \/>\n<a href=\"http:\/\/www.nytimes.com\/2010\/01\/18\/business\/18drill.html\">New York Times<\/a>):<\/p>\n<blockquote><p>In one experiment, researchers told consumers the regular and sale<br \/>\nprices of a product, asked them to repeat the sale price to themselves,<br \/>\nand then, a few minutes later, told them to estimate the size of the<br \/>\ndiscount in percentage terms.
