From the kitchens of <a href=\"http:\/\/www.foodchannel.com\/\">The Food Channel<\/a>, this recipe uses basic ingredients &#8212; potatoes, eggs and onion &#8212; to create an economical dish that can be made a day in advance of your get-together.<\/p>\n<p><strong>Prep Time: <\/strong>20 minutes<br \/>\n<strong>Cook Time:<\/strong> 35 minutes<\/p>\n<div id=\"attachment_140220\" class=\"wp-caption aligncenter\" style=\"width: 510px\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-140220\" src=\"http:\/\/images1.blisstree.com\/files\/2010\/01\/SpanishTortilla.jpg\" alt=\"Image: The Food Channel\" width=\"500\" height=\"331\" \/><\/p>\n<p class=\"wp-caption-text\">Image: The Food Channel<\/p>\n<\/div>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1\/4 cup extra virgin olive oil<\/li>\n<li>1 pound red or white potatoes, waxy<\/li>\n<li>Salt, to taste<\/li>\n<li>Black pepper, ground, to taste<\/li>\n<li>1 yellow onion, medium, sliced<\/li>\n<li>1\/2 teaspoon garlic, minced<\/li>\n<li>4 eggs, large<\/li>\n<li>1 tablespoon parsley, minced<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ol>\n<li>Pre-heat oven to 375 degrees F.<\/li>\n<li>Heat two tablespoons olive oil over medium heat in an 8\u2033 ovenproof skillet (preferably non-stick). Add sliced potato and season generously with salt and pepper. Cook potatoes, turning gently, until softened but not browned, approximately 20 minutes. Remove from pan and reserve.<\/li>\n<li>Add remaining oil and onion. Cook, stirring occasionally, until soft, approximately 10 minutes. Add garlic to onions and cook 2-3 minutes, until softened and aromatic. Return potatoes to skillet, gently stir to combine, and cook an additional 5 minutes.<\/li>\n<li>Reduce heat to low. Beat eggs with the parsley. Pour eggs into skillet over vegetables and shake the pan to evenly distribute the eggs. Cook, without stirring, for 5 minutes. Transfer to oven and cook 10 minutes, or until egg is set.<\/li>\n<li>Cool to room temperature.
