In many ways, however, we\u2019ve lost our food heritage.  Preparing foods the way nature intended is a lost art.<\/p>\n<p>The practices of putting up food for the winter was lost to the dusty cans of peaches and green beans found on supermarket shelves.  The practice of using the whole animal \u2013 nose to tail \u2013 in our kitchens was lost to the craze for boneless, skinless chicken breasts packed in convenient Styrofoam containers.  We\u2019ve forgotten how to prepare naturally leavened bread, how to culture milks and how to make cheese. I felt empowered to make changes to the manner in which I fed my family, but I also felt overwhelmed.  How could I make the time to do it all?  After muddling my way through, and documenting it here in the early days of Nourished Kitchen, I found a stride \u2013 but it was a steep learning curve.<\/p>\n<p>Real food blogger Wardeh has created a comprehensive 5-month e-course outlining the <a href=\"http:\/\/www.gnowfglins.com\/affiliates\/affiliates.php?id=132_1\">Fundamentals of Traditional Foods<\/a>.
