So the next time some of your bananas get overripe instead of tossing them, either consider making a loaf of banana bread or simply freeze them for when you are ready to bake.<\/p>\n<p>By simply putting bananas in the freezer, you will stop the ripening process. The skins will turn black, but once you\u2019re ready to use them simply defrost them with their peels on and once they\u2019re thawed peel them and they\u2019re ready to be cooked.<\/p>\n<h3>Getting our sugar from whole fruits<\/h3>\n<p>Bananas are a really healthy alternative to processed sugar. While fructose is a sugar, it\u2019s nothing to be afraid of &#8212; in moderation &#8212; when found in whole fruits. Fruits are not only packed with vitamins and minerals, but they\u2019re full of fiber.<\/p>\n<p>Bananas &#8212; with about 2 to 4 grams of fiber per fruit &#8212; are one of the top five fruits rich in fiber (others are <a href=\"http:\/\/www.ecomii.com\/food\/fruits\/pear\" >pears<\/a>, <a href=\"http:\/\/www.ecomii.com\/food\/fruits\/apple\" >apples<\/a>, <a href=\"http:\/\/www.ecomii.com\/food\/fruits\/fig\" >figs<\/a>, and<a href=\"http:\/\/www.ecomii.com\/food\/fruits\/blackberry\" > blackberries<\/a>), which helps to cut the risk of diseases like<a href=\"http:\/\/www.ecomii.com\/diabetes\" > diabetes<\/a> and <a href=\"http:\/\/www.ecomii.com\/cardiovascular-disease\" >heart disease<\/a>.<\/p>\n<h3>Sugar-free banana bread recipe<\/h3>\n<p>Many of these ingredients can be left out since bananas have such a distinctive flavor. So if you find yourself without baking powder, cinnamon, vanilla, nuts, or even salt, you can leave them all out and still bake up a tasty loaf of bread.<\/p>\n<p><strong>Ingredients <\/strong>\n<\/p>\n<ul>\n<li>3 mashed bananas<\/li>\n<li>\n1\/3 cup vegetable oil or melted butter (you can substitute the oil or butter with applesauce)<\/li>\n<li>\n2 eggs<\/li>\n<li>\n2 cup flour (can be white, whole wheat, spelt, you can experiment here)<\/li>\n<li>\n1 teaspoon baking soda<\/li>\n<li>\n2 teaspoons baking powder<\/li>\n<li>\n1 teaspoon vanilla<\/li>\n<li>\n1 teaspoon cinnamon<\/li>\n<li>\n1 cup chopped nuts<\/li>\n<li>\nPinch of salt <\/li>\n<\/ul>\n<p><strong>Directions <\/strong>\n<\/p>\n<ol>\n<li>Mash bananas in a bowl.<\/li>\n<li>\nAdd oil (or butter) and eggs and mix until creamy.<\/li>\n<li>\nMix in the flour, baking soda, baking powder, vanilla, cinnamon, and salt.<\/li>\n<li>\nStir in the nuts.<\/li>\n<li>Oil a 9&#215;5 inch loaf pan.<\/li>\n<li>\nPour mixture into pan.<\/li>\n<li>\nBake at 325\u00b0F for 45 minutes to an hour.
