{"id":412037,"date":"2010-03-10T13:56:29","date_gmt":"2010-03-10T18:56:29","guid":{"rendered":"http:\/\/green.yahoo.com\/blog\/ecomii_healthy_living\/87\/going-gluten-free.html"},"modified":"2010-03-10T13:56:29","modified_gmt":"2010-03-10T18:56:29","slug":"going-gluten-free","status":"publish","type":"post","link":"https:\/\/mereja.media\/index\/412037","title":{"rendered":"Going gluten-free"},"content":{"rendered":"<div class=\"image\" style=\"float:left;padding-right:8px;\">\n<img decoding=\"async\" alt=\"gluten free\" src=\"http:\/\/l.yimg.com\/a\/feeds\/us\/grn\/green_ecomii_simpleliving\/gluten-free.jpg\"\/>\n<\/div>\n<p>Fourteen years ago, I was diagnosed with <a href=\"http:\/\/www.ecomii.com\/irritable-bowel-syndrome\" >Irritable Bowel Syndrome<\/a> (IBS).\u00a0 Doctors told me that there was nothing they could do to help ease my discomfort and pain, except that I should watch my diet, reduce stress, and get lots of exercise.<\/p>\n<p>I attempted numerous alternative therapies and cut out meats, fermented foods, hot and spicy foods, and dairy products.\u00a0 However, it took three years ago before someone recommended that I eliminate wheat from my diet.\u00a0 Until this time, it had never occurred to me that <a href=\"http:\/\/www.ecomii.com\/science\/encyclopedia\/wheat\" >wheat<\/a>, or gluten, could be the source of my ailments.<\/p>\n<p>I have been wheat-free for over ten years now and gluten-free for about seven.\u00a0 My \u201cIBS\u201d is all but gone, and I lead a very healthy and normal life.\u00a0 My story isn\u2019t uncommon; in fact, it has become increasingly common for people who suffer from a broad range of symptoms from lethargy to liver disease.<\/p>\n<p>The over-consumption of wheat and gluten in our modern-day North American diet is seen to be a thread in many illnesses.\u00a0 Fortunately for us, as Celiac disease and gluten intolerance become more common, so does the availability of gluten-free products.<\/p>\n<p>I know how difficult it can be to commit to a gluten-free lifestyle change. Our relationship with food changes and so do our social interactions.\u00a0 It can be more difficult to dine out or eat with friends and it takes more conscious menu planning.\u00a0 However, the positive impacts of going gluten-free on our health and on the planet can be astounding.<\/p>\n<p>By going gluten-free, you are inherently eliminating many processed foods from your diet and introducing a variety of <a href=\"http:\/\/www.ecomii.com\/tips\/eat-more-whole-foods\" >whole foods<\/a>.\u00a0 By switching from wheat flour to flour made from almonds, quinoa, or buckwheat (among others) <a href=\"http:\/\/www.ecomii.com\/alternative-medicine\/whole-foods-diet\" >you enhance your intake of nutrients and minerals while reducing your carbon footprint<\/a>.
