Of course, this green has many identities and what you call it depends a lot on where you buy it. In France and in most American grocery stores it goes by the name m\u00e2che (pronounced mahsh), in Germany it\u2019s called Rapunzel and in some parts of this country it\u2019s called field greens or corn salad, because it\u2019s known to grow wild in corn fields. But today, since we\u2019re feeling in a spring mood, we\u2019re calling it Lamb\u2019s Lettuce and giving reader Richard Freund credit for reminding us how much we love this green in salad. Lamb\u2019s Lettuce (or m\u00e2che, or field greens, or Rapunzel\u2026) is unique not only for its delicate rosette shape, but also for its buttery texture.\u00a0 It\u2019s usually served in salads, but can also be thrown into soup or wilted slightly in a quick saut\u00e9 with oil.<\/p>\n<p><span id=\"more-11659\"><\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"Lambs Lettuce\" src=\"http:\/\/i247.photobucket.com\/albums\/gg158\/MDA2008\/MDA2009\/lambslettuce.jpg\" alt=\"lambslettuce\" width=\"480\" height=\"360\" \/><\/p>\n<p>Richard\u2019s Lamb\u2019s Lettuce and Spinach Salad recipe (submitted for the <a title=\"Primal Blueprint Cookbook Contest\" href=\"http:\/\/www.marksdailyapple.com\/primal-blueprint-contests\/primal-blueprint-reader-created-cookbook-contest\/\" >Primal Blueprint Cookbook Contest<\/a>) has such a vibrant, green color that we feel healthy just looking at it. In both color and nutrients, Lamb\u2019s Lettuce gives <a title=\"Smart Fuel: Spinach\" href=\"http:\/\/www.marksdailyapple.com\/spinach\/\" >spinach<\/a> a run for its money. Not only is it loaded with iron and B vitamins, it also contains omega-3 fatty acids. Where raw spinach is slightly astringent and coarse, Lamb\u2019s Lettuce is nutty and velvety. The two balance each other out nicely in a salad, and the addition of bright purple <a title=\"Smart Fuel: Red Cabbage\" href=\"http:\/\/www.marksdailyapple.com\/red-cabbage\/\" >cabbage<\/a> lends an added boost of color and antioxidants. Richard cuts up thin slices of green apple to give his salad a little sweetness and crunch, which together with the Lamb\u2019s Lettuce, spinach and cabbage creates a new flavor combination that will pull you out of a salad rut.<\/p>\n<p>Lastly, Richard picks a protein to make this salad recipe a full meal. A fillet of wild salmon will further enhance the omega-3s, but grilled chicken will taste great with the greens, too. Richard finishes off this mild and versatile salad with any dressing he has on hand, but <a title=\"Walnut Oil\" href=\"http:\/\/www.marksdailyapple.com\/walnut-oil\/\" >walnut oil<\/a> vinaigrette is our favorite since it enhances the sweet, nutty qualities of Lamb\u2019s Lettuce.<\/p>\n<p>As with most salads, simply add more or less greens depending on how many servings you want. In grocery stores, Lamb\u2019s Lettuce (or m\u00e2che) is often sold in 4-ounce bags. It\u2019s delicate and wilts easily, so plan to use it soon after you buy it. This time of year, keep your eye open for Lamb\u2019s Lettuce at farmers&#8217; markets as well.<\/p>\n<h3>Lamb&#8217;s Lettuce and Spinach Salad<\/h3>\n<p><strong>Ingredients (for approximately 1 serving):<\/strong><\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"Lambs Lettuce Salad Ingredients\" src=\"http:\/\/i247.photobucket.com\/albums\/gg158\/MDA2008\/MDA2009\/ingredients-28.jpg\" alt=\"ingredients 28\" width=\"360\" height=\"270\" \/><br \/>\n<\/strong><\/p>\n<ul>\n<li>1-2 cups Lamb\u2019s Lettuce<\/li>\n<li>1-2 cups raw spinach<\/li>\n<li>1\/2-1 cup grated red cabbage<\/li>\n<li>one quarter of a green apple (skin on), cut into matchsticks<\/li>\n<li>1\/2 pound wild salmon fillet<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Although the salmon can be cooked any way you like, poaching is a quick and easy method. Preheat the oven to 350 degress Fahrenheit. Place the salmon in a baking pan with just enough water to cover the bottom of the pan.<\/p>\n<p>Cover with foil and bake until done, approx. 10 minutes for a 1\/2 pound fillet.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"Salmon\" src=\"http:\/\/i247.photobucket.com\/albums\/gg158\/MDA2008\/MDA2009\/poachingsalmon.jpg\" alt=\"poachingsalmon\" width=\"480\" height=\"360\" \/><\/p>\n<p>Mix together the greens and apple* (see below), top with protein and drizzle dressing on top.<\/p>\n<h3>Walnut Oil Dressing<\/h3>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 tablespoon apple cider vinegar<\/li>\n<li>2 teaspoons minced shallot<\/li>\n<li>1\/3 cup walnut oil<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Mix together vinegar and shallot, then whisk in oil until well-blended. Add salt and pepper to taste.<\/p>\n<p>*For a flavorful twist on this salad dressing, omit the sliced apple from the salad and add it to the dressing instead.<\/p>\n<h3>Apple Walnut Oil Dressing<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"Apple Walnut Oil Dressing\" src=\"http:\/\/i247.photobucket.com\/albums\/gg158\/MDA2008\/MDA2009\/appledressing.jpg\" alt=\"appledressing\" width=\"360\" height=\"270\" \/><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>one quarter of a green apple, cut into matchsticks (skin on)<\/li>\n<li>1 tablespoon apple cider vinegar<\/li>\n<li>2 teaspoons minced shallot<\/li>\n<li>1\/3 cup walnut oil<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Put apple slices in a blender and pulse a few times to break them up. Add vinegar and shallot, then drizzle in oil with the blender running. Blend until the dressing has a thick, but smooth consistency.
