Despite what you may have heard, one isn&#8217;t healthier, more &#8220;natural,&#8221; or more eco-friendly<br \/>\nthan the other. And there aren&#8217;t any<br \/>\ndifferences in <a href=\"http:\/\/www.enc-online.org\/QuestionsandAnswers.htm\">nutritional<br \/>\nquality<\/a>, flavor, or cooking characteristics. <\/p>\n<p>The color of the shell is merely a reflection of the breed<br \/>\nof the hen. In general, but not always, hens with white feathers and earlobes lay<br \/>\nwhite eggs and those with dark feathers and red earlobes lay brown eggs. <\/p>\n<p>It may be surprising to learn that not all eggs are brown or<br \/>\nwhite. For example, some rare chicken breeds, such as the <a href=\"http:\/\/www.ithaca.edu\/staff\/jhenderson\/chooks\/chooks.html\">Araucana and<br \/>\nAmeraucana<\/a>, lay blue and blue-green eggs. <\/p>\n<p>There&#8217;s one difference between brown and white eggs that you may notice at the grocery store. Chicken breeds that produce brown eggs, such as the Rhode Island Red, are larger<br \/>\nand cost more to feed than hens that produce white eggs. So brown eggs may be a<br \/>\nlittle more expensive than white, according to the <a href=\"http:\/\/www.enc-online.org\/QuestionsandAnswers.htm\">Egg Nutrition Center<\/a>.\n<\/p>\n<p>You can get a better idea<br \/>\nof <a href=\"http:\/\/www.wisegeek.com\/what-is-the-difference-between-white-and-brown-eggs.htm\">how<br \/>\nnutritious and fresh<\/a> an egg is after you crack it open. You&#8217;ll see more <a href=\"http:\/\/www.eggs.ab.ca\/about\/faq.html\">white ropey strands<\/a> (called<br \/>\nchalazae) in fresher eggs, which will also have well-formed round yolks surrounded by thick<br \/>\nwhites. The <a href=\"http:\/\/www.enc-online.org\/trivia.htm\">color of the yolk<br \/>\ndepends<\/a> on the hen&#8217;s diet, according to the Egg Nutrition Center. If feed<br \/>\ncontains wheat or barley, yolks will be lighter colored.
