As raw milk&#8217;s popularity grows, so does scrutiny. It&rsquo;s been a<br \/>\ntough twelve months for proponents of raw milk. Last April, as many as 81<br \/>\nColorado consumers were sickened by campylobacter associated with raw milk.<br \/>\nLast September, about 35 people became ill with campylobacter, apparently from<br \/>\nmilk from a Wisconsin dairy. And just in the last few weeks, 17 raw milk<br \/>\ndrinkers in the Midwest associated with a dairy in Indiana have become ill with campylobacter.<br \/>\nAdded to all that, Whole Foods last month notified producers in four<br \/>\nstates&mdash;California, Washington, Connecticut, and Pennsylvania&mdash;that it would no<br \/>\nlonger stock raw milk.<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">What&rsquo;s the<br \/>\nproblem? As far as the public health and medical establishments are concerned,<br \/>\nwhenever people consume raw dairy products, it&rsquo;s a problem. In their view, raw milk is inherently<br \/>\ndangerous and shouldn&rsquo;t be produced or consumed. <\/p>\n<p><\/p>\n<p class=\"MsoNormal\">But the fact<br \/>\nthat as many as three million Americans regularly consume raw milk, according<br \/>\nto the Weston A. Price Foundation, calls the health establishment&rsquo;s radical<br \/>\nview into question. Still and all, raw dairy proponents are coming around to<br \/>\nthe view there is a problem&mdash;it&rsquo;s just not the problem the authorities would<br \/>\nhave us believe. <\/p>\n<p><\/p>\n<p class=\"MsoNormal\">In their view,<br \/>\nthese are really problems of success, stemming from raw<br \/>\nmilk&rsquo;s fast-growing popularity. <\/p>\n<p><\/p>\n<p class=\"MsoNormal\">As part of a<br \/>\nlong-standing campaign to encourage consumption of locally produced<br \/>\nnutrient-dense foods, the Weston A. Price Foundation has been encouraging<br \/>\nconsumers to switch to unpasteurized milk. <\/p>\n<p><\/p>\n<p class=\"MsoNormal\">But that doesn&rsquo;t<br \/>\nmean the organization wants conventional dairies to just discontinue<br \/>\npasteurization and sell their milk raw. As the organization says on its <a href=\"http:\/\/www.realmilk.com\">Real<br \/>\nMilk web site<\/a>, it &ldquo;recommends Real Milk&#8212;that is, milk that is full-fat,<br \/>\nunprocessed, and from pasture-fed cows. We do NOT recommend consumption of raw<br \/>\nmilk from conventional confinement dairies or dairies which produce milk<br \/>\nintended for pasteurization&hellip;Real Milk, that is, raw whole milk from grass-fed<br \/>\ncows (fed pasture, hay and silage), produced under clean conditions and promptly<br \/>\nrefrigerated, contains many anti-microbial and immune-supporting components;<br \/>\nbut this protective system in raw milk can be overwhelmed, and the milk<br \/>\ncontaminated, in situations conducive to filth and disease. Know your farmer!&rdquo;<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">With growing<br \/>\nnumbers of consumers willing to pay $7 and more a gallon for raw milk, more<br \/>\ndairies are looking to say good-bye to their local processors, who pay on the<br \/>\norder of $1 to $1.50 a gallon for milk intended for pasteurization. While there<br \/>\nare no exact figures, in states where raw dairies are licensed, like<br \/>\nPennsylvania, New York, and Massachusetts, the number of raw dairies has been<br \/>\ngrowing. Even in states where raw milk can only be sold via private arrangements,<br \/>\nknown as cowshares or herdshares, like Michigan and Ohio, the number of dairies<br \/>\ngetting into raw milk is understood to be rising sharply.<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">The biggest<br \/>\nproblem may be that at least some farmers are slipping up in their production<br \/>\nof safe raw milk. That doesn&rsquo;t mean raw milk can&rsquo;t be produced safely on a<br \/>\nconsistent basis. Obviously, many dozens of dairies are doing it day in and day<br \/>\nout, year after year. But as Tim Wightman of the <a href=\"http:\/\/www.farmtoconsumerfoundation.org\/\">Farm-to-Consumer Foundation<\/a> points out, &ldquo;There is value in understanding what happened&rdquo; at the dairies that<br \/>\nhave had outbreaks over the last year.<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">Wightman<br \/>\nsuggests that dairies experiencing outbreaks may in some cases have unwisely<br \/>\nresponded to increases in consumer demand by introducing animals purchased from<br \/>\na factory system known for problems. &ldquo;Looking for the best deal has its hidden<br \/>\ncosts&hellip;for the farmer and the consumer, and the very web we depend on,&rdquo; he says. <\/p>\n<p><\/p>\n<p class=\"MsoNormal\">It&rsquo;s precisely<br \/>\nbecause of its success that the raw milk community is now being placed under a<br \/>\nmicroscope by the media and regulators. There have been lengthy features challenging raw milk&#8217;s safety in<br \/>\nboth <a href=\"http:\/\/www.nytimes.com\/2010\/03\/25\/us\/25iht-letter.html\">The New York Times<\/a> and <a href=\"http:\/\/online.wsj.com\/article\/SB10001424052702304370304575151663770115120.html?KEYWORDS=raw+milk\">The Wall Street Journal<\/a> in just the last few weeks.<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">Part of the<br \/>\nchallenge for raw milk proponents is that at least some have not wanted to<br \/>\nadmit to the reality that people can become sick from drinking raw milk (just<br \/>\nas they can, and do, from pasteurized milk and other foods). It&rsquo;s been thought that cows that<br \/>\ngraze on pasture or eat hay produce milk that isn&rsquo;t susceptible to pathogens.<br \/>\nIt&rsquo;s also been assumed that public health authorities are biased in their<br \/>\ninvestigations of outbreaks. As a result, the Weston A. Price Foundation has<br \/>\nexpressed skepticism about whether raw milk has really been the culprit in the<br \/>\nColorado and Wisconsin outbreaks, among others. <\/p>\n<p><\/p>\n<p class=\"MsoNormal\">&nbsp;A Wall Street Journal <a href=\"http:\/\/blogs.wsj.com\/health\/2010\/03\/29\/raw-facts-what-some-people-dont-know-about-unpasteurized-milk\/?KEYWORDS=raw+milk\">blog<br \/>\nposting<\/a> following up on the paper&#8217;s article accuses proponents of &#8220;dismissing<br \/>\nwarnings about bacterial contaminants&#8230;&#8221; Unfortunately, the knee-jerk<br \/>\ndefensiveness in the face of probable outbreaks, which wasn&rsquo;t noticed when raw<br \/>\nmilk was a fringe food, just won&rsquo;t cut it any more now that raw milk is<br \/>\nregularly making the media big leagues.<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">In a truly open<br \/>\nmarket, the marketplace would force the bad dairies out of business. But we<br \/>\ndon&rsquo;t have a truly open market&mdash;we have one where regulators are in a position<br \/>\nto force good dairies out of business for the transgressions of bad dairies.<\/p>\n<p><\/p>\n<p class=\"MsoNormal\">Therefore, it&#8217;s up to the raw milk community to police itself. It could be there needs to be a raw dairy association, with real authority to penalize dairies that don&#8217;t meet high standards.
