Calabacitas is an especially delicious addition to your family&#8217;s &#8216;make-your-own-burrito&#8217; meals where each person chooses the fillings- making the dining experience fun and healthy for everyone. Add the zucchini, mushrooms, and the remaining tablespoon of water. Stir in the cumin and chili powder and simmer for 5 minutes, until the mushrooms are soft.<\/p>\n<p>Stir in the corn and cook for 2 minutes longer, until heated through. Season with salt and pepper to taste.
