Last week, I made this awesome and simple, &#8220;Soft Golden Beets With Shaved Manchego and Toasted Pecans.&#8221;<\/p>\n<p>Growing up, most of the beets I ate came from a can. When you have fresh beets, there is a huge difference in the flavor and texture&#8230;at least to me.
