{"id":58725,"date":"2009-11-23T03:00:36","date_gmt":"2009-11-23T08:00:36","guid":{"rendered":"http:\/\/nourishedkitchen.com\/?p=2676"},"modified":"2009-11-23T03:00:36","modified_gmt":"2009-11-23T08:00:36","slug":"mandarin-cranberry-relish","status":"publish","type":"post","link":"https:\/\/mereja.media\/index\/58725","title":{"rendered":"Mandarin &amp; Cranberry Relish"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2009\/11\/tangerine.JPG\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"tangerine\" src=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2009\/11\/tangerine-1024x639.jpg\" alt=\"tangerine\" width=\"512\" height=\"320\" \/><\/a><\/p>\n<p style=\"text-align: left;\">Friday afternoon, a heavy box brimming with satsuma mandarins courtesy of <a href=\"http:\/\/nourishedkitchen.com\/where-to-buy\/#fruits\"><em>Chaffin Family Orchards<\/em><\/a> greeted me at the post office.\u00a0\u00a0 I&#8217;d anticipated their arrival all week &#8211; eager for something fresh and vibrant after a month when no other fresh fruit was available from our CSA but for apples.\u00a0 These beautiful mandarins &#8211; like a palm full of sunshine &#8211; enlivened our kitchen, offering that slightly intense, perfect coupling of sweet and sour.\u00a0 The moment I pierced the skin of the first mandarin pulled from the box, I brought it to my nose to inhale its aroma &#8211; a vibrant combination of piercing citrus and subtle floral notes.\u00a0 Fresh.\u00a0 Decidedly fresh.<\/p>\n<p style=\"text-align: left;\">There&#8217;s beauty in the seasonality of any food, but citrus fruit is remarkably well-suited to its season.\u00a0 Indeed, it&#8217;s one of nature&#8217;s best gifts that these bright fruits come into season just when the days become dark and we miss the sun the most. For this reason, mandarins make for a charming gift during the holiday season &#8211; a way to offer a little sunshine to someone during the deep dark days of winter.<\/p>\n<p style=\"text-align: left;\">Of course, 15 lbs of mandarins seemed daunting at first.\u00a0 How would I make use of this bounty without letting any of the orchard&#8217;s work go to waste?\u00a0 While they make a perfect snack, peeled and eaten fresh, I wanted more.\u00a0 Shall I make citrus mead? Mandarins poached in a star anise syrup? Candied mandarin peel? Mandarin rooibos tea?\u00a0 Mandarin pudding?\u00a0 With the upcoming holiday, I settled on my first dish: a mandarin cranberry relish.<\/p>\n<p style=\"text-align: left;\">Both mandarins and cranberries are a potent source of vitamin C &#8211; although each offer a different combination of nutrients in addition to that vitamin C.\u00a0 Mandarins provide folate and fresh cranberries offer vitamins E and K in addition to manganese.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2009\/11\/cranberry-tangerine-sauce.JPG\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-2679\" style=\"margin-top: 10px; margin-bottom: 10px;\" title=\"cranberry-tangerine-sauce\" src=\"http:\/\/nourishedkitchen.com\/wp-content\/uploads\/2009\/11\/cranberry-tangerine-sauce-1024x641.jpg\" alt=\"cranberry-tangerine-sauce\" width=\"512\" height=\"320\" \/><\/a><\/p>\n<h2 style=\"text-align: left;\">Mandarin Cranberry Relish<\/h2>\n<p>This recipe makes approximately 1 quart of relish.
