{"id":58798,"date":"2009-12-02T02:19:03","date_gmt":"2009-12-02T07:19:03","guid":{"rendered":"tag:www.vegan-food.net:\/\/238e4d2696e593cf961b3e0da1168ec6"},"modified":"2009-12-02T02:19:03","modified_gmt":"2009-12-02T07:19:03","slug":"chickpea-and-okra-stir-fry-stir-fries-legume","status":"publish","type":"post","link":"https:\/\/mereja.media\/index\/58798","title":{"rendered":"Chickpea and Okra Stir Fry( Stir-fries &#8211; Legume )"},"content":{"rendered":"<p><strong>Daily Random Recipe<\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li>2 tablespoons oil<\/li>\n<li>15 grams \/ 1 tablespoon margarine<\/li>\n<li>1 large onion, chopped finely<\/li>\n<li>1 clove garlic, crushed<\/li>\n<li>3 tomatoes chopped<\/li>\n<li>1 green chilli, deseeded and chopped<\/li>\n<li>1 centimeter fresh ginger, grated<\/li>\n<li>450 grams \/ 1 pound okra trimmed<\/li>\n<li>1 teaspoon ground cumin<\/li>\n<li>1 tablespoon freshly chopped coriander<\/li>\n<li>400 grams \/ 14 ounces tinned chickpeas, drained<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p \/><strong>METHOD:<\/strong><br \/>In a large frying pan or wok, heat oil with margarine. Saute the onion and garlic for 4-5 minutes until onion has softened. Add tomatoes, chilli, ginger and stir well, then add the okra, cumin and coriander. Cook over a medium heat, stirring frequently, then stir in the chickpeas and salt and pepper.
