These two pioneer unique food delivery systems &#8212; think maki rolls printed on flavored paper, a dessert disguised as nachos\u00a0 and a bleeding veggie burger &#8212; at their Chicago restaurants, <a href=\"http:\/\/www.motorestaurant.com\/\">Moto<\/a> and <a href=\"http:\/\/www.ingrestaurant.com\/\">iNG<\/a>. At TED 2011, the pair spoke about their science-lab approach to food in the talk \u201c<a href=\"http:\/\/www.ted.com\/talks\/homaro_cantu_ben_roche_cooking_as_alchemy.html\">Cooking as alchemy<\/a>.\u201d<\/p>\n<p><a href=\"http:\/\/www.ted.com\/talks\/homaro_cantu_ben_roche_cooking_as_alchemy.html\" class=\"video_teaser\" ><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/images.ted.com\/images\/ted\/8153376c38c0f00cba30625963c393b1755994a1_240x180.jpg\" alt=\"Homaro Cantu + Ben Roche: Cooking as alchemy  \" width=\"132\" height=\"99\" \/>Homaro Cantu + Ben Roche: Cooking as alchemy  <span class=\"play\"><\/span><\/a>Embedded in this talk is a crazy idea &#8212; using \u201cmiracle berries\u201d to trick taste buds into thinking that sour foods are sweet. As Cantu explains, these berries contain a glycoprotein which could be used to make healthy junk food. Cantu explains in the talk, \u201cWe could eliminate sugar across the board\u00a0for all confectionary products and sodas,\u00a0and we can replace it with\u00a0all-natural fresh fruit.\u201d<\/p>\n<p>Last week, Cantu wrote on his talk page, \u201cAfter eight long years everyone, I have finally completed my first step towards the end of refined sugar.\u201d He has released a cookbook called <i><a href=\"http:\/\/www.amazon.com\/The-Miracle-Berry-Diet-Cookbook\/dp\/1451625588\" >Th<\/a><a href=\"http:\/\/www.amazon.com\/The-Miracle-Berry-Diet-Cookbook\/dp\/1451625588\" >e Miracle Berry Diet Cookbook<\/a><\/i>. It shares food trickery like how a lemon can be made to taste like lemonade, and a delicious ice cream that can be made with zero sugar. Watch above as Cantu discusses some of these fascinating recipes on the TV show \u201cWindy City Live.\u201d<\/p>\n<p>Cantu wants to show exactly how he and his chefs cooked up these taste bud-bending recipes.
