This tradition has of course continued and has now become tradition in our home. It&#8217;s a smart idea because fish is lean and not too heavy the night before you have a massive Turkey or Ham dinner.<\/p>\n<p>I found a great fish recipe in a new (amazing) cookbook produced by <em><strong>Readers Digest<\/strong><\/em> and <em><strong>Taste of Home Magazine<\/strong><\/em> called <em><strong>The Taste of Home Cookbook<\/strong><\/em>. This thing is massive and is practically an encyclopedia for cooking.<\/p>\n<p>The dish I chose to feature today is Mexican style <em><strong>Cilantro Lime Cod<\/strong><\/em>. Cod is one of those fishes that is light tasting but still has a lovely flavor. It is also extremely lean as 3 ounces of cooked Cod equal only 131 calories. Cilantro and Lime are also great flavors that compliment this light buttery fish.<\/p>\n<p><a href=\"http:\/\/images1.blisstree.com\/files\/2009\/12\/iStock_000007697032Small.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-135509\" src=\"http:\/\/images1.blisstree.com\/files\/2009\/12\/iStock_000007697032Small.jpg\" alt=\"iStock_000007697032Small\" width=\"400\" height=\"599\" \/><\/a><\/p>\n<p><em><strong>Ingredients:<\/strong><\/em><\/p>\n<p>4 cod or haddock fillets (2 pounds)<\/p>\n<p>1\/4 teaspoon pepper<\/p>\n<p>1 tablespoon dried minced onion<\/p>\n<p>1 garlic clove, minced<\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>1-1\/2 teaspoons ground cumin<\/p>\n<p>1\/4 cup minced fresh cilantro<\/p>\n<p>2 limes, thinly sliced<\/p>\n<p>2 tablespoons butter, melted<\/p>\n<p><em><strong>Directions:<\/strong><\/em><\/p>\n<p>1. Place each fillet on a 15-in. x 12-in. piece of heavy duty foil. Sprinkle with pepper. In a small saucepan, saute onion and garlic in oil; stir in cumin.<\/p>\n<p>2. Spoon over fillets; sprinkle with cilantro. Place lime slices over each; drizzle with butter.<\/p>\n<p>3. Fold foil around fish and seal tightly. Place on a baking sheet. Bake at 375 degrees for 35-40 minutes or until fish flakes easily with a fork.<\/p>\n<p>Serves 8.<\/p>\n<p><a href=\"http:\/\/images1.blisstree.com\/files\/2009\/12\/iStock_000010183601XSmall.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-135510\" src=\"http:\/\/images1.blisstree.com\/files\/2009\/12\/iStock_000010183601XSmall.jpg\" alt=\"iStock_000010183601XSmall\" width=\"425\" height=\"282\" \/><\/a><\/p>\n<p>Remember tradition is important around the holidays. It reminds us of the importance of family.
