Adding tomatoes makes it even more nutritious and hearty.<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n2 1\/2 cups uncooked lentils<br \/>\n1 14 oz can diced tomatoes<br \/>\n2 yellow onions, diced<br \/>\n1 green pepper, diced<br \/>\n2 cloves garlic, minced<br \/>\n1 cup chopped celery<br \/>\n3 cups vegetable broth<br \/>\n3 cups water<br \/>\n1\/4 cup olive oil<br \/>\n1 teaspoon turmeric powder<br \/>\n1 teaspoon cayenne pepper (optional)<br \/>\nparsley, chopped (optional)<br \/>\nsalt and pepper, to taste<\/p>\n<p><strong>Directions<\/strong><br \/>\nIn a large pot, heat the olive oil and add the garlic, onions, green pepper, and celery.  <\/p>\n<p>Cook for about 5 minutes, stirring occasionally, until garlic and onions begin to brown.<\/p>\n<p>Add the vegetable broth, lentils, turmeric, and tomatoes.  <\/p>\n<p>Bring to a boil then turn down the heat to a simmer and cover.  <\/p>\n<p>Cook for about 40 minutes or until lentils are tender.
