{"id":97387,"date":"2009-12-23T23:23:58","date_gmt":"2009-12-24T04:23:58","guid":{"rendered":"tag:www.vegan-food.net:\/\/9a15d5f4f68112fe36f6fcf928f6607d"},"modified":"2009-12-23T23:23:58","modified_gmt":"2009-12-24T04:23:58","slug":"lentil-soup-with-a-hint-of-fruit-soup-legume","status":"publish","type":"post","link":"https:\/\/mereja.media\/index\/97387","title":{"rendered":"Lentil Soup with a Hint of Fruit( Soup &#8211; Legume )"},"content":{"rendered":"<p><strong>Daily Random Recipe<\/strong><\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<ul>\n<li>2 cups red or brown lentils, rinsed and picked over<\/li>\n<li>8 cups water (maybe more)<\/li>\n<li>2 cups minced onion<\/li>\n<li>2 teaspoons ground cummin<\/li>\n<li>2 teaspoons dry mustard<\/li>\n<li>2 tablespoons minced garlic<\/li>\n<li>1 cup minced dried apricots<\/li>\n<li>1 1\/2 to 2 teaspoons salt (to taste)<\/li>\n<li>3 to 4 tablespoons balsamic vinegar (or, to taste)<\/li>\n<li>Black pepper and cayenne to taste<\/li>\n<li>Optional garnishes<\/li>\n<li>Extra slivers of dried apricot<\/li>\n<li>A drizzle of soy yogurt<\/li>\n<li>A sprig or two of coriander or parsley<\/li>\n<\/ul>\n<p \/><strong>METHOD:<\/strong><br \/>Place the lentils and water in a soup pot or dutch oven and bring to a boil. Cover, lower heat to a simmer, and cook for about 15 minutes. Add the onion, cummin, and mustard, and continue to simmer, covered, until the lentils are very soft (about 15 more minutes). Add small amounts of additional water, if it seems too thick.<\/p>\n<p \/>\nAdd the garlic, apricots, and salt, cover, and let sit for another 15 minutes or so. Stir in the vinegar, black pepper, and cayenne to taste (and correct the salt too, if necessary).
