    Kids Get It: Lessons on Healthy Food for a Healthy Life

    Last month, The Cancer Project introduced its revolutionary Food for Life for Kids program to the Kid Power DC after-school program at Kimball Elementary School in Washington, D.C. The class teacher reported: &ldquo Students thoroughly enjoyed the program. They need to know the importance of healthy eating.&rdquo Third-grade student Rebecca raved that it was the &ldquo best program.&rdquo Kid Power is a nonprofit organization that provides educational programming for 275 youth from underserved communities in Washington, D.C. Kid Power DC site coordinator Arianne Sthouis said: &ldquo The students looked forward to the class every week and kept asking what they were going to make and eat.&rdquo Another third-grade student, George, confirmed the success of the program with a few simple words. &ldquo I am going to eat more fruits and vegetables,&rdquo he said.

    The Five Most Unhealthful Foods at Mexican Restaurants

    At last week’s White House state dinner for Mexico’s president, guests enjoyed food from the first family’s favorite Mexican restaurant. But a report by The Cancer Project will make Mexican food enthusiasts think twice when ordering at Mexican fast-food restaurants.

    With more than 2,100 calories and more fat and sodium than most people should eat in a day, the Charbroiled Steak Nachos at Baja Fresh tops a list of five foods to avoid. Other offenders in the report from dietitians at the Cancer Project include items at Chevys and Chili’s.

    Diet and Cancer in the News

    The Latest Research on Cancer, Diet, and Genes
    Although women diagnosed with a genetic mutation of the BRCA genes have up to an 80 percent chance of developing breast cancer in their lifetime, new research shows that diet can still play a dramatic role in cancer prevention. Researchers discovered that a diet high in a variety of fruits and vegetables can significantly reduce breast cancer development in women with BRCA mutations. The BRCA gene is responsible for repairing DNA, but the antioxidant and phytonutrient complex in fruits and vegetables can assist the DNA repair system. A well balanced plant-based diet high in a variety of fruits and vegetables may be highly protective for women carrying an altered BRCA gene.

    Meat-Based Diets Increase Bladder Cancer Risk
    Meat consumption increases the risk of bladder cancer, according to a new study presented at the American Association for Cancer Research’s annual meeting. Researchers studied the diets of 884 participants with bladder cancer and 878 controls and found that those who ate the most meat were up to 58 percent more likely to develop bladder cancer. Eating well-done meat was linked to an almost twofold increased risk of bladder cancer. Cooking meat at high temperatures produces carcinogens called heterocyclic amines. Study participants who consumed the most bacon, pork chops, fried chicken, and fried fish also had a higher risk.

    Genetically Modified (GM) Foods Cause Sterility

    &quot We failed to get cubs from these pairs, which were fed with GM foodstuffs. It was proved that these pairs lost their ability to give birth to their cubs.&quot

    Dr. Alexei Surov, a Russian biologist describing the results of a study of hamsters fed genetically modified soy for two years over three generations. By the third generation, most the hamsters lost the ability to have babies. The pups who were born suffered slower growth and a high mortality rate. Inexplicably, some grew fur inside their mouths (click the link below for pictures).

    Monsanto and the Supreme Court: Urge President Obama to Withdraw Elena Kagan’s Supreme Court Nomination

    Kagan goes to bat for Monsanto

    U.S. Solicitor General Elena Kagan, President Obama’s pick for the Supreme Court, is the most recent in a long line of pro-biotech Obama appointees.

    As Solicitor General, Kagan submitted a friend of the court brief to the Supreme Court in favor of Monsanto’s appeal in Monsanto v. Geertson Seed Farms.

    Monsanto is trying to get the Supreme Court to force genetically engineered (GE) alfalfa onto the market, despite passionate opposition from organic consumers and farmers, and despite the fact the USDA never did a proper Environmental Impact Statement. Geerston Seed Farms made the case that GE alfalfa would permanently contaminate their GE-free alfalfa seed, prompting a California US District Court to effectively ban Monsanto’s GE alfalfa.

    As Solicitor General, Kagan is supposed to represent the interests of the American people in matters that come before the Supreme Court. Instead, she went to bat for Monsanto Co.

    Take action now! Tell President Obama to nominate a Supreme Court Justice who will stand up to the Monsanto and the biotech lobby and defend organic farming and democracy.

    Humane Charity Seal

    Hello Viewers,

    Polenta is a delicious whole grain food made from yellow corn grits. Milled yellow corn products like corn grits are high in carotenoids, and are more accessible, as a result of the milling process. Polenta pairs well with many different flavors, although it is typically associated with northern Italian cuisine. Any type of corn grits can be used in this recipe (fine, medium, or coarse), but the cooking time will increase slightly for coarser grinds. If baked, polenta is great to top with additions like salsa or a medley of saut&eacute ed vegetables.

    Basic Polenta

    Directions

    Makes 4 servings

    4 cups water or vegetable broth
    1/4 teaspoon salt
    1 cup yellow grits
    2 tablespoons nutritional yeast flakes
    2 tablespoons chopped roasted garlic (optional)
    2 tablespoons finely chopped herbs (such as parsley, thyme, sage, or rosemary optional)

    Combine the water and salt in a 4-quart or larger saucepan and bring to a boil. Add the corn grits slowly while whisking continuously. Whisk for 1 to 2 minutes to prevent the mixture from lumping. Lower the heat, cover, and cook on the lowest setting for about 40 minutes, stirring often.

    Use caution when removing the lid and stirring, as hot polenta can bubble up and splatter. If the polenta gets too thick, add a little more water or broth. If the liquid is heated before it is added, the polenta will cook faster (cold liquids will lower the polenta’s temperature and extend the cooking time). The polenta is ready when it is smooth and thick and the grains are tender.

    Toward the end of the cooking time, whisk in the nutritional yeast and optional garlic and herbs. Add more salt if needed.

    Serve soft-style, straight from the saucepan. Alternatively, spread the polenta in a 9 x 13-inch baking dish or sheet pan and allow it to cool-about 20 minutes. Cooled polenta can be sliced, brushed with a little olive oil, and then baked in the oven or placed under a broiler until crispy.

    Stored in a covered container in the refrigerator, leftover Basic Polenta will keep for up to 4 days. When reheating soft-style polenta, thin it by whisking in a little vegetable broth or water.

    Monsanto, Haiti’s &quot New Earthquake&quot

    &quot A new earthquake&quot is what Haitian peasant farmer leader Chavannes Jean-Baptiste of the Peasant Movement of Papay (MPP) called the news that Monsanto will be dumping 60,000 seed sacks (475 tons) of hybrid corn seeds and vegetable seeds on Haiti, seeds doused with highly toxic fungicides such as thiram, known to be extremely dangerous to farm workers. Hybrid seeds, like GMO seeds (in contrast to Creole heirloom or organic seeds) require lots of water, chemical fertilizers, and pesticides. In addition if a small farmer tries to save hybrid seeds after harvest, hybrid seeds usually do not &quot breed true&quot or grow very well in the second season, forcing the now-indentured peasant to buy seeds from Monsanto or one of the other hybrid/GMO seed monopolies in perpetuity. Monsanto wanted initially to dump GMO seeds on Haiti, but even the corrupt Haitian government knew that this would spark a rebellion, so Monsanto cleverly decided to dump hybrid seeds instead. The Haitian small farmers organization has committed to burning Monsanto’s seeds, and has called for a march to protest the corporation’s presence in Haiti on June 4, for World Environment Day.

    Since gaining their independence from France more than 200 years ago in a bloody slave uprising, Haitian farmers have wisely protected their seeds and nurtured native crop varieties.     As Chavannes Jean-Baptiste, the Executive Director of the Peasant Movement of Papay (MPP), wrote earlier this year, &quot We need to establish seed banks and have silos where we can store our Creole seeds. Local, organic seeds are the basis of food sovereignty. It’s urgent that Haitians buy local seeds. … What’s the danger we face today? It’s that food aid from USAID and others is getting dumped in the country.&quot

    Monsanto Plant Shut Down By Dutch Activists

    Check out this great activist-produced video documenting Monday’s action shutting down Monsanto’s Dutch offices and greenhouses.

    On Monday, 50 people with the action group ‘Roundup Monsanto’ blocked both gates of the Monsanto seed company near Rotterdam in the Netherlands. ‘Roundup Monsanto’ wants Monsanto to back out of the seed market, and demands an end to patents on seeds and living organisms. Monsanto and other agro-chemical multinationals are lobbying the Dutch government and the EU for legislative changes that would make it easier for large companies to take control of the seed market and food production.

    These cookies are easy to prepare and make just one batch, so it’s a quick job. If you do not wish to use the whole batch, these cookies freeze well. Whole grains and molasses are packed with fiber and iron. Walnuts, although not to be consumed in excess, are still excellent anti-inflammatory nuts that provide essential omega-3 fatty acids. They’re a sweet, low-fat, delicious treat you can enjoy without the guilt-or the cholesterol!

    This week’s recipe is courtesy of Jill Ovnik. Jill is a Cancer Project Food for Life class instructor who believes that education and exposure to the right foods can improve health and change lives. This is why she is so passionate about healthy cuisine and has taught the Food is Elementary curriculum. Jill is the founder and president of the website Vegan Gal (www.vegan-gal.com). She is also the writer and producer of the DVD Change Your Food, Change Your Life. Jill received her certification from the Food Studies Institute.

    Oatmeal Cookies
    Oatmeal Raisin Cookies

    Directions

    Makes about 12 cookies

    1 cup whole wheat pastry flour
    1/2 cup rolled oats (not instant or quick oats)
    1 teaspoon baking powder
    1/4 teaspoon cinnamon
    1/4 teaspoon salt
    2 tablespoons molasses
    1/2 cup packed brown sugar
    3 tablespoons rice milk
    1 tablespoon vegetable oil
    1 teaspoon vanilla extract
    1/4 cup chopped walnuts
    1/4 cup raisins
    cooking spray or oil for baking sheet

    Preheat oven to 350 F.

    Combine flour, oats, baking powder, cinnamon, and salt in a small mixing bowl. Stir well and set aside.

    In another small bowl, combine molasses, brown sugar, rice milk, oil, and vanilla and stir well to combine. Add to dry ingredients and stir until just combined. Add walnuts and raisins. Mix well to combine, but do not over-mix the batter.

    Drop dough using 2 spoons onto a sprayed or lightly greased baking sheet. Flatten each cookie with back of spoon, if desired. Bake for about 15 minutes (ovens may vary.)

    Transfer cookies to a cooling rack using a metal spatula. Cool completely before storing.

    Food for Life Succeeds in United Kingdom Expansion

    It’s official&mdash the Food for Life program has reached the United Kingdom (U.K.)! Classes are now up and running in both Stafford and Wolverhampton, spreading the important message of good nutrition for cancer prevention and survival. Sue Brown from Valencia, Spain, attended the inaugural U.K. series in March and said, &quot I found the class very interesting, clear and educational. The food was great and I was most surprised by foods that I always believed were good for us were actually harmful to our health. I am looking forward to attending more classes in the future.&quot

    The leader behind The Cancer Project’s U.K. expansion is Ayo Olaseinde, Saladmaster executive sales director for the U.K. and Ireland, who is making a donation to The Cancer Project for every Saladmaster dinner held. When asked to explain about his support of the program, he said, &quot The reason why I joined Saladmaster was to change lives and make a difference. The Cancer Project has taken this to another level with the opportunity to reach out and make a real difference to those who are in need. In some ways we could call this a lifeline.     Masters in April.

    Golf for Your Health and a Good Cause

    Riddle: What do golf, cancer, and good food all have in common? The first annual Masters in April Golf Tournament held in Dallas, Texas, on April 10 brought all these elements together for a huge success! The event, organized by Rob Weseman of Lone Star Health Systems Inc., encouraged many people to golf for their health and for the health of their loved ones. The event raised more than $2,800 for The Cancer Project, to help our efforts in continuing to inform the public about good nutrition through the Food for Life program. Rob is already looking ahead to host the same event in 2011. In addition to Rob’s efforts in hosting fundraising events for The Cancer Project, he has pledged to donate to The Cancer Project for every Saladmaster dinner held by his dealership. The Cancer Project is incredibly grateful for Rob’s support and devotion to his community with the simple and delicious tools to prevent and survive cancer. His efforts have made it possible to continue to provide people with resources they need for cancer prevention and survival.

    Another Successful Run for The Cancer Project

    Last month we told you that Kyle Hall, a cancer survivor and supporter of The Cancer Project, was planning on running in the Boston Marathon to raise money for The Cancer Project. We’re happy to report that not only did Kyle complete the race, but his efforts raised over $2,100 for our educational programs.

    Here’s a excerpt of what Kyle wrote to us after the race:

    &ldquo I had a strong, gutsy race. I thought a lot about The Cancer Project donors and those who could not be out running for various health reasons. This really helped me keep up the pace, especially as I was wearing thin in the later miles. Although I need to condition more for the later miles, I felt like I grinded it out well and was happy with how I performed on the finishing stretch and with my overall time. And it was all vegan powered! In the weeks before the race my diet became even more centered around fruits and vegetables and I believe this was a key ingredient to my success. With sincere gratitude, I thank all of the donors who helped make this possible. I will continue running for those who cannot.&rdquo

    Diet and Cancer in the News

    Fruit and Vegetable Intake is Only One of the Important Dietary Factors in Cancer Prevention and Survival
    High fruit and vegetable intake is modestly associated with lower overall cancer risk, according to new findings from the European Prospective Investigation into Cancer and Nutrition (EPIC) study. Among 9,604 men and 21,000 women with cancer, those who consumed 200 grams of fruits and vegetables a day had approximately 2.5 percent lower cancer risk compared to those who ate less than 200 grams. For reference, one medium apple with skin is about 180 grams by weight. Vegetables alone showed greater benefit than fruits in lowering cancer risk but only in women. Factors that were not evaluated include cooking methods or dietary background earlier in life. Further commentary on this study can be found here.

    Journal Publishes Childhood Obesity Conference Proceedings
    Childhood obesity became a hot topic this year. Everyone from the first lady, Michelle Obama, to celebrity chefs like Jamie Oliver contributed to the dialogue on how to fight America’s childhood obesity epidemic. The National Conference on Childhood Obesity, co-sponsored by The Cancer Project, helped kick off that conversation last summer. This month, the conference’s proceedings are published in a supplement in The American Journal of Clinical Nutrition.

    &ldquo My hope is that the information provided will further our knowledge in the best practices for the prevention and management of childhood obesity and will empower health professionals and policymakers to work together to overcome societal and environmental challenges,&rdquo says guest scientific editor Michelle Wien, Dr.P.H., R.D., of Loma Linda University.

    In the supplement’s article titled &ldquo Vegetarian Diets and Childhood Obesity Prevention,&rdquo Joan Sabat&eacute , M.D., Dr.P.H., professor of nutrition and chair of the Loma Linda University Nutrition School of Public Health, writes, &ldquo The prevention of obesity in childhood and adolescence by the adoption of a vegetarian diet will subsequently decrease a broad range of adverse health effects in childhood.&rdquo

    This recipe from a burrito shop in Ithaca, N.Y., is a perfect vegetable combination for tostadas, tacos, and burritos. Calabacitas is an especially delicious addition to your family’s ‘make-your-own-burrito’ meals where each person chooses the fillings- making the dining experience fun and healthy for everyone. The zucchini in this recipe adds folate and vitamins A and C, which promote the growth of healthy cells and tissues.

    Calabacitas

    Directions

    Makes 4 servings

    1 small yellow onion, finely chopped
    2 tablespoons water
    2 small zucchini, quartered lengthwise and sliced
    8 ounces mushrooms, sliced
    1/2 teaspoon ground cumin
    1/2 teaspoon chili powder
    1 1/2 cups frozen corn
    1/4 teaspoon salt
    1/4 teaspoon ground black pepper

    Cook the onion in 1 tablespoon of the water, stirring frequently, until the liquid has evaporated. Add the zucchini, mushrooms, and the remaining tablespoon of water. Stir in the cumin and chili powder and simmer for 5 minutes, until the mushrooms are soft.

    Stir in the corn and cook for 2 minutes longer, until heated through. Season with salt and pepper to taste. Serve immediately.

    Stored in a covered container in the refrigerator, leftover Calabacitas will keep for up to 3 days.

    Mad Science: Climate Chaos and Geoengineering

    Monsanto, Cargill, Archer Daniels Midland, Bill Gates and a swarm of get-rich-quick corporations are telling anxious world politicians and the Obama Administration not to worry about impending climate catastrophe. They’ll take care of the problem with genetically engineered crops, animals, and trees agrofuels derived from plantations of GMO corn and soybeans and monoculture plantations of sugar cane and palm oil and other hi-tech, potentially apocalyptic schemes such as blasting sulfate particles into the stratosphere to reflect the sun’s rays dumping iron particles in the oceans to nurture CO2-absorbing plankton and firing silver iodide into clouds to produce rain.

    Supreme Court Sees No Problem with Genetic Pollution from Monsanto’s Genetically Engineered Alfalfa

    In the first Supreme Court case dealing with the hazards of genetically engineered crops, a federal court injunction against Monsanto’s genetically engineered alfalfa, the justices showed little concern about the safety or inevitable genetic pollution of biotech crops. Justice Antonin Scalia suggested that the threat to conventional or organic growers was minor and manageable.

    &quot It makes it more difficult for them (farmers not planting Monsanto’s GMO alfalfa) to have a field of 100 percent non-genetically engineered (alfalfa), but that’s not the end of the world,&quot Scalia said.

    Mango adds a healthful dose of beta-carotene to this refreshing salsa. Beta-carotene is a powerful antioxidant that helps stop free radical damage it’s found in most orange-colored fruits and vegetables. Serve this colorful salsa with a vegetarian chili or baked tortilla chips. Enjoy!

    Directions

    Makes about 8 servings

    1 large mango, or 5 ounces frozen mango, thawed and diced (about 1 cup)
    1 large tomato, seeded (optional) and diced
    1/4 cup minced fresh cilantro
    3 tablespoons freshly squeezed lime juice
    1 tablespoon minced jalape&ntilde o chile, or 1/2 teaspoon crushed red pepper flakes
    1/4 teaspoon salt

    To prepare the fresh mango, peel it and use a sharp paring knife to cut the flesh away from the pit. Cut the flesh into 1/4-inch cubes. Place the diced mango in a medium mixing bowl.

    Add all of the remaining ingredients and stir to combine. Let stand 15 minutes to allow the flavors to marry. Stored in a covered container in the refrigerator. Leftover salsa will keep for up to one day.

    Variation: For Peach Salsa, substitute one large peach for the mango.

    Action Alert of the Week: Stop Factory Farm Production of &quot Organic&quot Poultry and Eggs

    Get Synthetic Methionine Out of &quot Organic&quot Feed!

    Methionine is an essential amino acid vital to poultry health. It is not produced by the body and must be obtained through diet. Methionine deficiency can lead to curled toes, bare spots and improper feathering. But poultry farmers can avoid using synthetic methionine by raising &quot free-range&quot organic birds, giving them access to pasture or supplementing their diet with organic feed ingredients that provide natural methionine.

    Eggs from organic free-range hens raised on pasture are far more nutritious than eggs from confined hens in factory farms:

    &bull 4 to 6 times as much vitamin D
    &bull 1&frasl 3 less cholesterol
    &bull 1&frasl 4 less saturated fat
    &bull 2&frasl 3 more vitamin A
    &bull 2 times more omega-3 fatty acids
    &bull 3 times more vitamin E
    &bull 7 times more beta carotene

    So, why isn’t this the norm in organic poultry and egg production?

    Because the industry has been lobbying for cheap feed and factory farm production methods.

    The United Egg Producers, lobbyists for industrial egg producers, have submitted comments to the National Organic Standards Board to block the October 2010 sunset on the use of synthetic methionine in organic production. UEP represents these organic egg producers: Cal-Maine Foods, Delta Egg Farms, Dixie Egg Company, Fassio Egg Farms, Fort Recovery Equity, Inc., Herbruck’s Poultry Ranch, Kreher’s Farm Fresh Eggs, LLC, Nature Pure, LLC, Oakdell Egg Farms, Ritewood, Inc. and R.W. Sauder, Inc.

    United Egg Producers are no fans of organic. On their home page, the top article is &quot Organic food not nutritionally better, survey finds.&quot And, they claim that, &quot While farmers produce all types of eggs (regular, cage-free, organic) to meet consumer and market place demand, right now Americans prefer ‘regular’ eggs produced in modern, sanitary cage systems by a margin of 95% based upon their purchases and consumption statistics.&quot

    We can’t let the United Egg Producers bully the organic industry into adopting their industrial production methods.

    Organic consumers need to stand up for TRULY organic eggs and poultry.

    Take Action: Keep Nanotech Ingredients Out of Organic Food!

    The USDA National Organic Program’s advisory panel, the National Organic Standards Board, will be meeting in California at the end of this month. OCA political director Alexis Baden-Mayer will be presenting testimony at the meeting. It is essential that we back up OCA’s position to ban nanotechnology from organic production with as many letters from OCA members as possible. This is a huge public health and environmental issue. Will the USDA permanently ban nanotech ingredients from organic food and products, or will they leave the door open to this new, dangerous, unregulated technology, with the power to literally change matter at the atomic or electron level?

    Despite overwhelming evidence that genetically engineered (GE) crops have failed to deliver on industry promises to feed the world and reduce pesticide use, a new multi-billion dollar aid bill directs taxpayer dollars towards more GE research. As written, the Senate bill is a stealth giveaway to corporations like Monsanto under the fraudulent guise of feeding the world’s poor.

    Act Now! Tell your Senator to oppose the Global Food Security Act until the pro-Monsanto GE clause is removed!

    Take Action: Still Time to Save Local and Organic Farming from One-Size-Fits-All Food Safety Bill

    In the next few weeks, the U.S. Senate is expected to vote on a sweeping overhaul of federal food safety law S. 510. The House food safety bill passed last year (HR 2749) included several measures that threaten small-scale organic producers, including a registration fee of $500 and blanket application of complicated monitoring and traceability standards – regardless of farm size.
