Daily Random Recipe

INGREDIENTS:

• 1 tablespoon active dry yeast or 1/4 ounce / 8 grams package yeast
• 1 1/2 cups lukewarm water
• 7 tablespoons olive oil
• 3 cups bread flour, plus extra for kneading
• 1/2 cup whole wheat flour
• 2 teaspoons coarse salt
• 2 large cloves garlic, minced
• 1/4 cup finely chopped kalamata olives
• 1 teaspoon minced fresh rosemary

METHOD:
In a large bowl, sprinkle yeast over water and stir with fork to dissolve. Let stand 5 min. Whisk in 4 tablespoons olive oil.

In separate bowl, mix bread flour, whole wheat flour and 1 teaspoon salt. Add flour, one cup at a time, to yeast mixture, stirring well after each addition. When dough begins to come away from sides of bowl, turn out onto lightly floured work surface. Knead in garlic, olives and 1/2 teaspoon rosemary. Continue kneading, adding more flour as nec, until dough is shiny, elastic and no longer sticky, about 10 min.

Transfer dough to lightly oiled bowl and turn to coat all sides with oil. Cover bowl with plastic wrap and set aside until dough triples in volume, about 2 hrs.

Punch down dough and place in a greased 13 x 9 inch (33 x 23 centimeter) baking sheet. Press and pat dough until it covers entire surface of pan. Cover with a towel and let rise until dough reaches top edge of sheet, about 45 minutes.

Preheat oven to 400F/205C. Just before baking, dimple dough with fingertips and drizzle surface with 2 tablespoons olive oil. Sprinkle with remaining 1/2 teaspoon rosemary and remaining 1 teaspoon salt. Place on middle oven rack. Put an empty baking dish on lower rack. Quickly pour 1 cup boiling water into empty dish and close door. Bake until bread is well risen and golden 20 – 25 min. Remove bread from pan to wire rack. Brush surface with remaining 1 tablespoon oil. Cut into squares and serve warm.

Makes 16 servings

Flatbread, called fougasse, is enjoyed throughout Provence. This assertively flavored fougasse can be cut into small squares for an appetizer or larger squares to be served with a meal.

Foursquare, the geo-location based check-in game, just announced its first venue that is combining badges and promotions. On Foursquare you get badges for checking into places. The person who checks into a place the most becomes the “Mayor.” You also get promotions from restaurants and bars nearby based on your location. Now those two elements are being tied together. For instance, Blynk Organic a restaurant in Charlotte, North Carolina is the first venue to offer this promotion:

A promotion like this is clever since it is also tied to something other than checkins and mayorships. The idea is that it will not only give other customers an incentive to compete and become the mayor, but also motivate customers to complete interesting tasks before redemption.

In the past, Foursquare has done check-in and mayorship promotions, but in a more ad-hoc manor. Now the promos are presented as actual ads in the app. I spoke with Foursquare’s Director of Business Development Tristan Walker, who also spoke at our RealTime CrunchUp in November, and he mentioned that there are close to 400 businesses to this date that are running regular geo-triggered promos with Foursquare.

It is not clear how Foursquare will get paid for these badge promotions. Walker says, “Right now we’re just focused on getting as many venues running promos on the platform as possible before we think about monetizing. We’d like to understand a bit more about how venue owners would like to leverage our platform in interesting ways first.”

Foursquare has been one of the main startups in the geo-location market along with recently funded Gowalla.

Dale Vince, the founder of green energy supplier Ecotricity, will be attempting to break the land speed record in an all-electric vehicle dubbed the Nemesis. The record currently stands at 137mph, which will be challenged by the wind-powered electric vehicle.

It looks as if we’re still waiting patiently for color e-ink to become a reality (at least in a mass produced shipping product), but if you’re kosher with low-energy consumption LCDs, Paradigm Shift has the ticket. Similar to Sungale’s Cyberus ID700WTA, the outfit’s 5-inch EER-051 and 7-inch EER-071WF are both e-readers with color, but neither boast e-ink displays. The former includes 1GB of built-in memory, an SD expansion slot, an integrated MP3 player and support for just about any kind of ebook file (non-encrypted EPUB included). The latter steps up to 2GB of memory, and thanks to the Windows CE operating system, it’ll also handle Office files and the like when it’s not flipping text. Both devices are expected to ship in February through Delstar here in the States, with the 5-incher available in a rainbow’s worth of hues for $149.95 and the big boy in black or white for $50 more. Although the daily trends on Twitter over the past year have often been silly or even obscene, hindsight has proven to be much more interesting.

WhatTheTrend has compiled a great overview of Twitter hashtags and trending topics. Their Twitter Zeitgeist 2009 gives us food for thought as we move into a new, hopefully less gaming-prone era of examining and measuring what real users are really talking about on the social web. Now, let’s talk about Twilight and Michael Jackson. Or, in the choose-your-own-adventure model of blog posts, you can skip to the part where we talk about tech-related trending topics instead.

One of the most notable uses of any social network to date was the role of Twitter in the Iranian election/debacle/bloodbath. The U.S. State Department even made a call when Twitter was scheduled for maintenance downtime during the pursuant protests because the messaging service had proven so vital to the democratic process in that country. Or is there something about taste-making and multimedia content curation that draws users to simply participate more?

Also, there are the films. New Moon, the second in the Twilight franchise, earned a number five spot in the rankings. We are grateful that our sole experience of these tweets are a brilliant collection of snarks from professional lampooner, newly minted TV pretty boy and TheOnion.com web editor Baratunde Thurston. Also-rans are Paranormal Activity, a horror flick that turned a $15,000 budget into around $80 million in box office receipts, and the latest Harry Potter movie. Finally, as a longtime Trekkie, I am happy to report that the new Star Trek film beat out Bruno by around 20 places in these rankings.

Both the Palm Pre and BlackBerry were mentioned in the top 100 trends, and one of our top ten international apps, Spotify, earned a number 63 spot on the list for consistent chatter and news throughout the year. Bing and Google Voice each earned a spot lower on the list, coming in at 81 and 100 respectively.

Finally, to nod graciously in the direction of our good-natured rivals at Mashable, their Open Web Awards were the 27th most talked-about thing on Twitter this year. For a topic that didn’t appear until mid-October (and for a topic generated by a tech blog, no less), this is a great measure of success for which Pete Cashmore and his team are to be congratulated.

Recently 50 appeared on Tyra’s show and divulged that they are friends again and that Fox will appear as his love interest in an upcoming video for Do You Think About Me.

He said, “She was really upset with me (after the break-up)…I called her.  I said, ‘You got to stop fighting and be in my video.’  The song’s about when relationships don’t work, and when I explained it to her it kind of intensified what the song was about.  And it’s now being a visual with the public seeing us as that relationship that didn’t work.”

I recently found the Moka Express stovetop espresso maker by Bialetti on clearance at Target for only $20. I usually sells for around $29 at places like Bed, Bath & Beyond.

The Moka Express, along with my Primo Latte milk frother, have made for some really wonderful homemade (and affordable) cappuccinos. I like using nonfat milk.

How the Moka Express Works

You measure the water and pour it into the bottom of the espresso maker. The ground coffee beans go in the funnel-shaped filter. Place the pot on the stovetop. As the water fills the top part of the Moka Express, it turns into great-tasting espresso! (Read the instructions for more details and safety precautions.)

According to Bialetti’s website, the Moka Express is used to make more than 120 million cups of espresso each day. Bialetti also claims that the coffee produced is more aromatic and intense than American-style coffee. I’ll agree with that. Real coffee drinkers will gasp at this, but I think it makes a fine decaf espresso as well!

I can’t think of much I don’t like about the Moka Express. It allows you to make great espresso without a big machine that takes up a lot of counter space. It’s made in Italy of a food-safe aluminum alloy. The espresso maker can be used with a gas or electric range or an electric plate. However, you’d want to make sure the handle doesn’t hang over a source of heat.

The Moka Express is easy to clean and store. I’m not sure why Target decided to put them on clearance!

Moka Express for Homemade Espresso

Shock jock loudmouth Rush Limbaugh is hospitalized in serious condition in Honolulu this final Wednesday of 2009 after complaining of chest pains at a local resort.

Paramedics responded to a call for help at 2:41 PM at the Kahala Hotel and Resort, where the controversial conservative is vacationing, according to Hawaiian TV station KITV. Limbaugh was sitting in a chair in his ninth-floor hotel room when emergency crews arrived, sources say. He told medical crews that he was taking medication for a back problem.

Limbaugh, 58, who has more than 20 million listeners, was taken to Queen’s Medical Center. He is in serious condition. In 2003, Limbaugh underwent treatment for an addiction to prescription painkillers, including Lorcet, Norco and hydrocodone.

I really want to make 2010 the year of savings! Or should I say, the year of paying off everything!

But first, let’s get the list out of the way:

• Continue to eat healthy and exercise.I know this is kind of a general statement, but I feel like I’ve been doing pretty well in this area, so not a whole lot of goals currently.

• Go on vacation somewhere. I have never really been on vacation. I have visited family in Boston, but besides when I was younger, I haven’t been anywhere on my own. Originally, Mirza and I thought that during his spring break (in March) that we would go to California. See San Francisco, etc., but after calculating the expenses, it doesn’t seem feasible at this time. So, instead, we are thinking perhaps we will drive to Georgia or North Carolina and spend like 3 days, 4 nights in a cabin in the woods; go white water rafting, hiking, that sort of thing. Everything is still up in the air at this point as it all depends on how much my tax return comes out to. I originally put the vacation out of my mind and decided I would just save, save, save. But my very responsible and awesome sister repeated to me literally 5 times, “Nicole, you’re always responsible, go on vacation, you deserve a vacation.” And since my sister is so smart, I listen to her!

• Read more books!  I’m always reading something, but I really want to get in some good reading before the next goal comes into play. Right now I’m actually reading three books! Ask me what I’m reading if you’re interested;)

• Start grad school!  Yes, in Fall 2010, I would like to begin the Adult Master’s in Nursing program at my undergrad school, USF. Since Mirza isn’t graduating until tentatively May 2011, I figure I might as well just start school and get it over with. Not just “get it over with,” but I would like to be finished with school before we have children and all that jazz someday.

• Stay tidy and organized! I’m a clean person. Type A. However, I would like to kick it up a notch by making life easier. By this, I mean try to make a habit out of washing a dish right after I use it, instead of placing it in the sink. I want the kitchen and bathroom cleaned before going to bed.  This week I’ve been organizing everything and cleaning. I donated an entire garbage bag full of clothes. And most of them were just lounge-around the house clothes. Why do I need like three drawers full of pajamas??? I don’t!

• Get on the day shift!  This goal may be happening SOON!!! I learned  last week that someone on the day shift has resigned, so that means a spot is open! I haven’t talked with my manager yet due to holidays, but this seems to be my in? I hope there won’t be some other reason why I cannot take her spot. I NEED TO GO TO DAY’S. Don’t get me wrong, I am loving the extra cash and it would be smart to stay on days in order to accomplish goal #1: save money. But damnit, I cannot live this lifestyle!!!  Updates to follow as I hear news…

• Ideally, I want an 8 months emergency fund, but quite frankly, that is impossible at this point, but I am saving up slowly. I would like to save another $2,000 for 2010. That isn’t too crazy, to me, anyway.
• Continue to contribute to my 401K. I started with $689 at the beginning of the year and I now have over $6900! woohooooo.
• I want to pay off 75% of my car loan. Based on my tax return, this would be quite feasible, but a challenge in self-resistance. I would need about $3,000 towards the car, and then another like $375/ mo to accomplish this goal. Ultimate goal is to pay off the car completely by January 2011 from that tax return. Seeing as this is a 5 year loan, I would be paying it off in two years, which would be a huge accomplishment for me! Because of my limited credit history, I did not get the best financing options, unfortunately, but I needed a car and I did not go all out and purchase some brand-new fancy car.
• I will have my computer paid off by mid-February, if not sooner. No biggie.
• I know all of this will be difficult once I start school because that means more expenses, but…BUT!! Some news: I may still be eligible (for the first semester anyway, until I turn 26) to receive Veterans educational benefits because of my father (even though he died). I received > $800 a month while in undergrad because of his 100% disability (all mental), and if I go part time, I could be getting close to $400 a month, which would help A LOT!!!
• (PS: I have no credit card debt. Only debt to name is in the form of my car and student loans, which are minimal, like $2,000).

For January, I am challenging myself to a NO SPENDING MONTH. I will only be purchasing essentials, like food and gas, and of course, paying my bills. I honestly feel like life is surrounded way too much by materialism and purchasing THINGS that we DO NOT NEED!! I am so sick of it. Sometimes for entertainment, we go to the stores…wtf? this should not be entertainment (unless you’re shopping!!). We need more fun activities!!

When I have the urge to spend and shop, I will just channel my inner Suze Orman:

In a previous post we looked at how fast food is possibly far more safe than USDA provided school lunches. Neither are too healthy, but fast food at least has more rigorous testing in its favor. Still, even if you ignore the fact that meat in school lunches is questionable, there are tons of other reasons (pdf) why we need to provide better, greener, healthier school lunches for kids. Following are ways you can make sure your kids and other kids are getting the best school lunch possible.

If you have the means don’t purchase USDA provided lunches (at least until they improve) – pack a healthy green lunch instead. Many parents don’t have the means to do this though. In fact more than 30.5 million children are participants in the national free lunch program, and so some kids and parents have no other choice which means we still all need to advocate for healthy lunches.

• Join the School Lunch Revolution, a program designed by Whole Foods that offers comprehensive FREE resources for healthy school lunch recipes that work for schools of all size, resources for finding real, natural foods, regionally and locally, , training videos covering cooking techniques to food safety, educational tools for parents, community activism resources that can help you learn how to initiate healthy and nutritious change in a school system.
• Organic Consumers is urging everyone to get involved with the 2009 Reauthorization of the Child Nutrition Act. The act is a good opportunity to create positive change. We can help change where the food comes from, how nutritious is it, and how healthy our kids will be.
• Discourage fast food companies and soda machines. Both of these things, fast food, and especially soda are making our kids fat and unhealthy.

• Write to Congress about the changes you’d like to see for school lunches. I’ll say it again, write to congress! In order to provide healthy and safe school lunches, school lunch programs need more money, which congress will need to see fit to offer.
• Send an action alert about school lunches to Congress.
• For updated news about school lunches read School Lunch Talk, an excellent blog all about, you guessed it, school lunches.

MOST IMPORTANTLY: start at home. Your kids, even when they’re away from you can learn to make smart choices, if you get them on board with healthy eating at an early age. Talk to your kids about healthy foods vs. empty calories. Discuss organics. Tell them they don’t have to choose junk food and raise them with both food freedom and plentiful healthy choices around the house.

How you raise your kids does matter. I raised my son with food freedom and surrounded him with healthy options and he’s a very smart eater for an eight year old. When he’s with other people and I’m not around, he’ll still ask the adults for healthy foods like broccoli, water and organic apples. He’s primarily a vegetarian by choice and will happily choose veggies or fruits over candy or sweets on most occasions. I didn’t trick or force him to be like this, I just made sure he was raised with fresh healthy food choices around and made sure that I ate them too.  It took very little doing on my part to raise a crazy veggie lover – and you can raise your kids this way too.

Advocate for safe & healthy school lunches

It really is miraculous how within hours of birth, some mammals find their legs and learn to walk. They might be unsteady at first, but it doesn’t take long for baby horses and other newborn animals to appear as though they’ve been walking for years, not days. Many animals seem to progress so quickly, but we humans do not, and a new study tells us why.

This study began in order to determine what’s holding humans back. Many animals walk within days of weeks or birth, while it takes human babies approximately one year to get on their feet and begin to walk. After examining the gestation period, adult body mass and adult brain mass, researchers discovered that brain mass plays the biggest role in which mammals walk faster. Those with a smaller adult brain mass seem to begin walking earlier on. Why? Well, they haven’t gotten that far yet. But it’s what sets us apart.
